Instructions
Prepare the chipotle sauce: In a skillet over medium heat, combine the cream, chopped chipotle peppers, and a sprinkle of garlic and onion powder. Stir consistently for 5-7 minutes until smooth and slightly thickened. Set aside.
Cook the ground beef: In a separate large pan, heat a drizzle of oil over medium-high heat. Add the ground beef, breaking it apart with a spatula, and cook for 7-10 minutes until fully browned with no pink remaining. Drain excess fat.
Assemble the burritos: Warm the tortillas in a dry skillet or microwave for about 20 seconds. Place a generous scoop of the cooked beef in the center of each tortilla, roll tightly, and lay seam-side down in a greased baking dish.
Smother with sauce and cheese: Pour the chipotle sauce evenly over the assembled burritos and sprinkle shredded cheddar cheese on top.
Bake to perfection: Preheat oven to 350°F (175°C). Bake for 20-25 minutes until the cheese is melted and bubbly and the top is golden. Let rest a few minutes before serving.
