Layer tater tots to cover the bottom of a 9x13 inch baking dish.
Add a layer of pulled pork barbecue, about ½ inch thick.
Sprinkle with crispy onions.
Layer cheese cubes on top of the barbecue, spacing out the cheese cubes as evenly as possible.
Add a final layer of tater tots to cover the casserole.
Bake for 25-30 minutes, until top layer of tater tots is golden brown.
Notes
One batch of barbecue is plenty for this casserole, but double it if feeding a larger crowd. Leftover barbecue pork works well here too. Store leftovers in the fridge for up to 5 days and reheat uncovered in the oven so the tater tots crisp back up.
