Instructions
In a large pot, boil the pasta according to package directions for al dente. Drain, reserving some pasta water.
Place all chicken seasonings into a small bowl and mix: paprika, oregano, garlic powder, thyme, salt, and pepper.
Pound the chicken breasts to thin them out slightly.
Season the chicken on both sides with the seasoning mix.
Heat the olive oil in a large skillet over medium heat.
Once hot, sear the chicken for 5 minutes on each side.
Flip the chicken, lower the heat slightly to medium-low, cover, and cook an additional 10-12 minutes until internal temperature reaches 165°F. Remove chicken to a cutting board.
Add the butter to the pan and allow it to melt.
Add the dry shallots, garlic powder, and Italian seasoning. Stir well and simmer for 1 minute.
Add the flour and stir well, scraping the bottom of the pan.
Pour in the chicken broth and heavy cream and whisk until smooth and creamy.
Add the Parmesan cheese and stir until completely melted. Cook, stirring occasionally, until the sauce reaches desired consistency.
Add the pasta to the skillet and toss well to coat evenly.
Add reserved pasta water, one tablespoon at a time, to thin the sauce as needed.
Slice the chicken breast and add it to the pasta. Stir gently, then serve.
Notes
Refrigerate leftovers up to 3 days in an airtight container. Reheat in a skillet over medium-low heat or in the microwave at 1-minute intervals. If the sauce is too thick after storing, thin it with reserved pasta water or a splash of broth.
